The cinnamon and allspice give these stuffed peppers a really special flair! I usually make a little extra rice (Jasmine is my personal favorite) and serve the peppers with the extra rice and some of the tomato sauce. You can make these ahead and freeze them if you make them through the stuffed part. You can adjust the spices to your taste. I have no idea where I got this recipe but I've been making these for over 35 years!
Ingredients:
4 green peppers
1 lb ground beef
1 cup rice, cooked
1 cup onion, diced
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon allspice
1/4 teaspoon pepper
1 (29 ounce) can tomato sauce
Directions:
1. Wash, cut off tops and rinse and seed the peppers.
2. Steam peppers for about 5 minutes to par cook the peppers, drain and cool.
3. Brown ground beef and onions together, drain.
4. Mix the ground beef, onions, cooked rice and seasonings.
5. Stuff peppers with mixture.
6. Place in baking dish.
7. Top with tomato sauce.
8. Bake, covered, at 350 F for 45 minutes - 1 hour.
