bell peppers with beef, carrots, tomatoes & rice
Ingredients:
6 bell peppers
1 lb lean ground beef
1 clove garlic
1/4 cup onion
1 carrot
28 oz canned tomatoes
1 cup cooked brown rice
1 t brown sugar
1/4 t basil
1 t ketchup
Directions:
1. clean peppers, boil for 4 minues & rinse in cold water.
2. Cook beef, garlic, onion, carrots, peppers, until tender.
3. add tomatoes, rice, brown sugar, basil & s/p. cover & simmer. cook 30 mins until rice is tender.
4. Stuff peppers, top with ketchup and bake 15-20 mins in 350
