Stuffed Artichokes

Wonderful side or main dish. Great source of fiber.
Ingredients:
2 artichokes
4 slices dried italian bread
1/4 cup water
1 tbls extra virgin olive oil
1 tsp garlic salt
1 tsp parsley
1 cup black olives
Directions:
1. Cut stem off bottom of artichoke. Trim top 1/2 inch off with knife. Trim points off leaves in between top and bottom. Pull open from center and cut out small pointy center.
2. Crumble the dried italian bread, add a little water at a time until moist. Mix in remaining ingredients except olives. Add olives after all ingredients are well mixed.
3. Stuff artichokes with stuffing mix. Place artichokes in a sauce pan with 1-2 inches of water. Add fresh or crushed garlic (2 tbls) to the water. Drizzle a good amount of olive oil over the stuffed artichokes and in the garlic water.
4. Bring to boil and then turn down to simmer for about an hour. They are done when you can easily pull out leaves the meat is easily scrapped off the leaf with your teeth.
