Pork stuffed acorn squash
Ingredients:
3 cups acorn squash
1 cup cooked brown rice
5 ounces ground pork
1/2 cup red pepper
1/2 cup chopped onion
Directions:
1. Brown pork, add onions and peppers and saute until clear. Add cooked rice and mix well. Place into halved and seeded acorn squash. Cover and bake for 30-45 minutes at 350 degree oven.
