This is one of our favorites!
Ingredients:
4 medium tomatoes, peeled,seeded,and cut into strips
1 cup frozen peas
1 teaspoon minced garlic
1/4 cup olive oil
2 tablespoons red wine vinegar
1 tablespoon grated parmesan cheese
1/4 teaspoon basil
Directions:
1. Toss tomatoes with peas and garlic.
2. Mix oil, vinegar, cheese and basil; mix well.
3. Pour over tomatoes, toss well.
4. Serve on a bed of lettuce.
