The totally non-boring French Toast. You can use any type of preserves, not just strawberry. That's just my preference.
Ingredients:
1-8 oz. pkg cream cheese, softened
1-12 oz. jar of strawberry preserves (or your choice)
1 tsp vanilla extract
1/2 cup walnuts or pecans, chopped
1-16 oz loaf french bread
4 eggs
1 cup heavy whipping cream
1/2 tsp ground nutmeg
1/2 tsp vanilla extract
1/2 cup orange juice
fresh raspberries (optional)
Directions:
1. In a small mixing bowl, beat together cream cheese, 2 tbsp of preserves, 1 tsp of vanilla until fluffy.
2. Stir in nuts, set aside.
3. Cut bread into 10 to 12, 1-1/2 thick slices; slice a pocket in top of each one, (not center, but top where crust is.)
4. Fill each pocket with about 1-1/2 tbsp of cheese mixture.
5. Beat together eggs, whipping cream, nutmeg and 1/2 tsp of vanilla.
6. Using tongs, dip filled bread slices into egg mixture, be careful not to squeeze out filling.
7. Cook lightly on greased griddle over medium heat about 2 minutes on each side, until golden brown. Keep warm in 300 degree oven while cooking remaining slices.
8. Meanwhile, in small saucepan heat together the remaining preserves and orange juice.
9. To serve, drizzle the preserve mixture over hot French Toast. If desired, top with raspberries.
