Strawberry & Spinach Salad |

This is a great summer salad that tastes awesome. I had all the ingredients and was suppose to bring a dish to a cookout. I put it together wondering if people would like it, and instead, it ended up getting eaten all up. I love this salad!! Ingredients:
1/2 lb pecans |
1 lb spinach, torn or |
1 lb baby spinach |
1 pint strawberry, halved |
1/3 cup red wine vinegar |
1 teaspoon salt |
1/2 cup olive oil |
1 teaspoon dry mustard |
1/2 cup sugar |
1 1/2 teaspoons onions, minced |
1/2 teaspoon poppy seed (optional) |
Directions:
1. Brown pecans on a butted baking sheet at 350 degrees for 10 minutes. 2. In a large serving bowl, mix together spinach and strawberries. 3. In a separate bowl, blend together vinegar, salt, oil, mustard, sugar, onion and poppy seeds. (I use my Vitamix blender- it blends so smoothly). 4. When you are ready to serve, toss in pecans. Gently toss dressing into spinach and strawberries before serving. |
