Strawberry Soup With Black Pepper Ice Cream

The hottest cold fruit soups this spring feature a little extra kick, an unexpected flavor to enhance and enrich the other ingredients and to surprise the taster. It could be a pinch of pepper, or some shallots, or even a splash of red wine that cuts the sweetness and adds some depth to everything from berries to melon. Read more . The puff pastry garnish is optional – but it does make the dessert look really nice. This is from Olana Restaurant. You'll have plenty of white chocolate sauce left to put over ice cream at another time.

for the soup
1 pint fresh strawberries
4 cups water
1/2 cup sugar
juice of 1 lemon
for white chocolate sauce
1 (12-ounce) bar good quality white chocolate
1-1/2 cups heavy cream
for puff pastry
1 sheet frozen puff pastry, thawed to room temperature
strawberry jam
1 egg
for ice cream
1 or 2 cups softened vanilla ice cream
pinch of pepper
Directions:
1. Make soup: Wash and stem the strawberries. Cut them in half.
2. In a medium saucepan, bring the water, sugar and lemon juice to the boil. Add the strawberries to the boiling water and cook until the berries are breaking apart and liquid is red and thick. Remove strawberries from the liquid and allow the soup to cool.

4. Meanwhile, make the white chocolate sauce: break up the pieces of chocolate. Bring the cream to the boil and pour the chopped white chocolate over it. Whisk until the chocolate is melted; set aside to cool.
5. For the puff pastry ravioli, preheat the oven to 350 degrees. Cut out small circles of puff pastry and place 1 teaspoon of strawberry jam in the center of half of them. Brush remaining circles with a little bit of egg. Sandwich them together with the jam-topped circles. Pinch the sides together and bake for 8 minutes or until they are light brown and bubbly. Don't worry if a little of the jam leaks out.

7. Spoon a little white chocolate sauce into each of 2 bowls. Put a warm puff pastry ravioli on top. Spoon black pepper ice cream on top of that. Pour on the strawberry soup and serve.
