This is another salad/dessert I had to put in for our daughter, Erin Kathleen. She always asks her grandmother to make this for Christmas dinner. It will only keep for a couple days in the fridge, but that’s not an issue since we never have any left after the first day…
Ingredients:
2 cups pretzels sticks, coarsely crushed
3/4 cup butter
2 tablespoons sugar
8 ounces cream cheese
8 ounce container cool whip
1 cup powdered sugar
1 (6 ounce) strawberry jell-o
2 cups hot water
2 (10 ounce) packages frozen strawberries (unsweetened), partially thawed
Directions:
1. Melt the butter; mix with crushed pretzels and sugar.
2. Pat firmly into a 9x13 ungreased pan.
3. Bake at 350 for 10 minutes.
4. Cool completely before adding next layer.
5. Beat cream cheese with Cool Whip and powdered sugar.
6. Spread this over the cooled pretzel crust. Chill completely.
7. Dissolve jell-o mix in hot water.
8. Mix in partially thawed frozen strawberries.
9. Gently pour this over the cream cheese layer.
10. You can top with a layer of Cool Whip, if desired.
