Yum!!!!!!!!! I had a similar salad at a local bakery/cafe and I LOVED it... this one is very close!!! Light and refreshing on a summer day. This recipe should be made with fresh blueberries and strawberries...frozen just doesn't work here. Don't forget to reserve the juices from the oranges and pineapples!
Ingredients:
1 head romaine lettuce, torn into bite-sized pieces
about 24 strawberry, sliced
1 (8 ounce) can mandarin oranges
1 (8 ounce) can sliced pineapple
1 1/4 cups fresh blueberries
1/4 cup pecans or 1/4 cup almonds, roughly chopped
1/2 cup reserved juices, from pineapples
1/3 cup reserved juices from mandarin orange
1/4 cup apple juice
2 tablespoons poppy seeds
Directions:
1. Gently toss together the romaine lettuce, strawberries, mandarin oranges, pineapples, blueberries, and nuts. Set aside.
2. Whisk together the reserved juices from the pineapples and oranges and the apple juice. Whisk in the poppyseeds at the last minute, as you don't want them sinking to the bottom and therefore all pouring on the same part of your salad.
3. Pour on your desired amount of dressing right before serving time to avoid the lettuce wilting. ENJOY!
