this is a light fruity omelet and very tasty i hope you try it its delicious.......... courtesy of martha buehring......... Ingredients:
3 1/2- ounces fresh strawberries , sliced plus extra for topping |
1- tablespoon strawberry preserves............ |
1- teaspoon brown sugar |
1- tablespoon butter |
3- large eggs |
1- teaspoon coconut rum |
crushed almonds |
shredded coconut |
powdered sugar |
Directions:
1. toss sliced strawberries with the preserves and brown sugar until well coated................. 2. heat an 8 inch skillet over medium heat................ 3. add butter and wait until it is bubbling , then whisk the eggs and pour into the skillet.................... 4. cook until eggs are set on the bottom but still moist................ 5. lift the edges gently with the spatula tilting pan to let uncooked eggs run under.............. 6. sppon strawberry mixture over 1/2 of the eggs .................. 7. cook just until eggs fluff................. 8. remove from heat and sprinkle with coconut rum, fold omelet in half to enclose the filling and slide onto a serving plate 9. top with remaining strawberries , crushed almonds and shredded coconut 10. sprinkle with powdered sugar 11. makes one omelet................enjoy this tasty treat................. |
