STRAWBERRY MOUSSE This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Olsen Estate in Grand Prairie, Texas in 1982.
Ingredients:
1 quart strawberries
1/2 cup granulated sugar
3 envelopes unflavored gelatin
1/2 cup cold water
1 cup boiling water
2 cups whipping cream
1/2 cup sifted powdered sugar
whole and sliced strawberries
Directions:
1. Puree 1 quart of strawberries in container of blender.
2. Add 1/2 cup sugar and process until blended.
3. Soften gelatin in 1/2 cup cold water in a large bowl.
4. Add boiling water stirring until gelatin completely dissolves then cool.
5. Stir strawberry mixture into gelatin then chill until consistency of unbeaten egg white.
6. Beat cream until foamy then gradually add powdered sugar and beat until soft peaks form.
7. Fold whipped cream into strawberry mixture then spoon into lightly oiled mold.
8. Refrigerate until set then remove to serving plate and garnish with strawberries.
