Strawberry Jam

From Jody Vassallo little ideas diabetes - NOTE This jam has a low sugar content so keep it int he refrigerator and it WILL NOT last as long as regular jam.
Ingredients:
750 g strawberries (hulled 1 1/2lb)
1 apple (green peeled and grated)
2 tablespoons honey (yellow box suggested)
1 vanilla bean (halved lengthwise)
50 g pectin (jam setting mixture with pectin 1 2/3 oz)
Directions:
1. Put the strawberries, apple, honey and vanilla bean into a saucepan and cook over medium heat for 15 minutes or until the strawberries are soft.
2. Add the jam setting mixture and bring to the boil and cook for 5 minutes, stirring often to prevent the jam from sticking to the pan.
3. Bottle the jam in sterilised jars.
