Strawberry Jam

Perfect for canning and gifting. Makes a nice, spreadable jam.
Ingredients:
8 cups strawberries
4 tablespoons lemon juice
7 cups sugar
1 (1 3/4 ounce) box fruit pectin
Directions:
1. Crush strawberries to yield 5 liquid cups.
2. Mix crushed strawberries and lemon juice in 6-8 qt saucepan.
3. Whisk in fruit pectin.
4. Bring to a rolling boil over high heat, stirring constantly.
5. Add sugar all at once.
6. Return to rolling boil, stirring constantly, and boil for 1 minute.
7. Remove from heat.
8. Ladle into prepared 1/2 pint jars, leaving 1/4 headspace.
9. Lid jars and place into boiling canner.
10. Boil jars for 10 minutes.
11. Remove jars from boiler and let them cool for 24 hours for a good seal.
