Strawberry Cream Muffin

The Muffin Lady by Linda Fisher and Andrew Marton
Ingredients:
2 cups flour
1 cup sugar
1 tbs baking powder
1 tsp salt
4 tbs butter
1/4 cup oil
3/4 cup milk
2 eggs
1 tsp vanilla extract
1/2 pint strawberries, whole
8 ounces cream cheese
Directions:
1. Preheat oven to 350 degrees.
2. Sift together all the dry ingredients. Make a well in the center. Blend in the remaining ingredients except the strawberries and cream cheese. Spoon the batter into a wax paper-lined 12-unit muffin pan.
3. Place 1 or 2 berries in the center of the batter in each muffin mold. Whip the cream cheese and place in a small pastry bag with a 4 tip (or cut off the corner of a plastic sandwich bag).
4. Squeeze about 1 tbs of cream cheese into and on top of the strawberries. Bake for 35-40 minutes.
