Intense flavor & easy. Lasts several weeks in the refrigerator. A great bread to use as the base for strawberry shortcake with a twist! This could be toasted as croutons for summer salads too. Another delicious recipe from Welch's The Magic of Jelly . I suspect this might work well for OAMC. This calls for Strawberry Spread, but Zaar keeps changing it to jelly . Servings may vary depending on slice thickness. Kudos to Twissis for the addition of the baking powder which lightened the original dense texture.
Ingredients:
1 cup butter
1 1/2 cups granulated sugar
4 eggs
1 cup strawberry jelly (spread)
3 cups all-purpose flour
3/4 teaspoon cream of tartar
1/2 teaspoon baking soda
2 teaspoons baking powder
1/2 cup sour cream
1 teaspoon vanilla extract
1 teaspoon lemon juice
1 teaspoon orange zest, finely grated
Directions:
1. Preheat oven to 350 degrees.
2. Grease two loaf pans.
3. In a large mixing bowl, cream butter and sugar.
4. Add eggs, one at a time, beating well.
5. Mix in strawberry spread.
6. Mix in flour, cream of tartar, baking soda and baking powder.
7. Mix in sour cream, vanilla, lemon juice and orange zest.
8. Pour into greased loaf pans and bake about 50-60 minutes (or until inserted knife comes out clean).
