My mom just phoned to share this with me. She did not create this recipe. I tried to find it on this sight with an ingredient search but could not. The recipe calls for fresh pineapple, but she didn't care for the pineapple in this salad. She said that it was too tart.
Ingredients:
6 romaine lettuce leaves
2 cups strawberries
1 banana
1 cup pineapple
1 (8 ounce) can coconut milk
2 tablespoons lemon juice
1 tablespoon mustard
1/2 teaspoon ground ginger
1/4 cup water
1/4 cup toasted almond
Directions:
1. Mix 1/4 can of coconut milk, lemon juice, mustard, ground ginger, and water together.
2. Serve over lettuce, strawberries, banana and pineapple.
3. Top with toasted almonds.
