Stove Top Tomato and Bell Pepper Chicken

This is a stovetop chicken recipe that is different and delicious! It's very easy, and only requires an hour of cook time.
Ingredients:
4 chicken quarters (thighs and legs)
2 tablespoons olive oil
2 tablespoons butter
1 cup onion, chopped
2 tablespoons garlic, chopped fine
14 ounces chopped tomatoes (canned)
1 red bell pepper, cut lengthwise in strips
1 tablespoon dried oregano
Directions:
1. Add chicken to large frying pan. Add olive oil, butter, onion and garlic to chicken. Cook on medium/medium-hi heat for about 15 minutes until chicken is brown on both sides.
2. Add canned tomatoes, red bell pepper and oregano to chicken. Turn heat to low, cover pan with lid and simmer for 30-45 minutes, turning chicken every 10-15 minutes.
3. Serve and enjoy!
