Stone Fruit And Berry Salad

A very simple fruit summer fruit salad. Great for cookouts or picnics!
Ingredients:
1lb fresh plums, halved, pitted and cut into about 1/2 inch pieces
1lb fresh peaches, halved, pitted, and cut into about 1/2 inch pieces(leave the skin or remove it, your choice
1pt fresh blueberries
1pt fresh blackberries or raspberries
juice from 1 lemon
juice from 1 lime
1/4 cup honey
1t vanilla
a few sprigs of fresh mint(leave whole)
4-6oz goat cheese with honey, crumbled
Directions:
1. In large bowl, combine the juices with vanilla and honey and stir to combine and mix well.
2. Add all the fruits
3. Rub/crush all the mint leaves on the sprigs and toss them in the bowl, too.
4. Carefully fold fruit with the dressing to combine.
5. Add the goat cheese crumbles and carefully fold, again.
6. Refrigerate at least 2 hours or over night.
7. Remove the mint sprigs prior to serving.
