Stir'n'dine Couscous

This makes a great light dinner served with Greek salad.
Ingredients:
1 cup water
1 tablespoon butter
1/2 teaspoon salt
1 cup couscous
19 ounces lentils, drained and rinsed
3 green onions, sliced
1/4 cup fresh parsley, chopped
Directions:
1. Bring the water to a boil in a small saucepan.
2. Add the butter and salt.
3. Stir in the couscous.
4. Cover and let sit 5 minutes, then fluff with a fork.
5. Stir the remaining ingredients into the hot couscous.
