Stir Fried Scallops and Snow Peas

Ingredients:
1 tablespoon dry sherry
2 teaspoons soy sauce
1 teaspoon sesame oil
1/2 teaspoon sugar
1/2 lb bay scallop
2 teaspoons cornstarch
1/4 teaspoon salt
1 tablespoon peanut oil
1 tablespoon minced fresh ginger
3 ounces snow peas, trimmed
3 scallions, cut into 1 inch lengths
Directions:
1. In a small bowl combine sherry with soy sauce, sesame oil, sugar and 1 tablespoon water. Whisk until sugar is dissolved. Set aside.
2. In a small bowl sprinkle scallops with cornstarch and salt. Toss to coat.
3. In a large skillet, heat oil. Add scallops and stir fry until golden, 1 minute.
4. Add ginger, snow peas, and scallions and stir fry until snow peas are bright green, 1 minute.
5. Reduce heat to medium low. Add reserved sauce and cook, stirring until sauce thickens and scallops and vegetables are well coated.
