Chicken and vegetables stir fried and served over rice. 4 servings
Ingredients:
1 cup broccoli
1 cup asparagus
1/2 cup green beans
1 medium fresh tomato
1/4 cup onion
1 clove garlic
2 tablespoons vegetable oil
1/2 lb. chicken breast
1 tablespoon soy sauce
2 cups cooked brown rice
Directions:
1. Cut chicken into bite size pieces and saute in oil. Remove from pan.
2. Saute vegetables except tomato until tender crisp,
3. add tomato and soy sauce.
4. Simmer until tomato is cooked through. Serve over cooked brown rice.
5. Serves 4.
