Stir Fried Beef and Blue Cheese Salad

Ingredients:
1/2 lb steak
2 tablespoons vegetable oil
1/2 lb fresh mushrooms, sliced
1/4 cup chopped red onion
2 tablespoons red wine vinegar
1 tablespoon dijon mustard
1/4 teaspoon garlic salt
1/4 teaspoon pepper
1 medium tomato, chopped
1/4 cup crumbled blue cheese
1/2 head red leaf lettuce
Directions:
1. Cut beef into thin strips. In a wok or large skillet, heat 1 tablespoon oil until very hot.
2. Add beef and stir fry for 2-3 minutes, until beef is browned outside but still pink in the center. Remove to a plate.
3. Add remaining oil to wok and heat until hot. Add mushrooms and red onion and stir fry for 2-3 minutes, or until onion is tender.
4. Add vinegar, mustard, garlic salt, pepper and tomato and toss to blend well.
5. Return sautéed beef to wok and add blue cheese. Toss to mix. Serve on lettuce lined plates.
