This pork is wonderful with some plain boiled rice and steamed greens> The pork can be tossed in the marinade just before cooking or overnight if you have time. Leftover pork can be turned into a tasty wrap by rolling it up in flour tortillas with hoisin sauce, cucumber sticks, shredded scallion and lettuce.
Ingredients:
1 lb pork fillet
4 tablespoons soy sauce
1 tablespoon clear honey
1 orange, juice and finely grated zest
2 teaspoons fresh ginger, grated
Directions:
1. Tip all the marinade ingredients into a shallow dish and stir to combine.
2. Coat the pork in the marinade and if you have time, leave for one hour or preferably overnight.
3. Heat the oven to 400°F.
4. Heat an ovenproof pan and take the pork out of the marinade.
5. Brown the pork on all sides then baste over the rest of the marinade and roast the pork for 20 mins until cooked all the way through, basting with the juices every so often.
6. Serve the pork sliced with rice and steamed greens.
