Stewed Tomatoes and Onions

This comes from the South Beach Diet Book. I have not made this. Am posting in reply to a request.
Ingredients:
1/2 cup chopped green bell pepper
1/4 cup thinly sliced celery
1 small onion, chopped
1 clove garlic, minced
3 cups peeled chopped tomatoes
1 tablespoon red wine vinegar
1/8 teaspoon fresh ground black pepper
Directions:
1. To peel tomatoes: Cut a small, shallow X into the bottom of each tomato.
2. Place into boiling water for 1 minute and then immediately plunge into ice water.
3. Remove, dry and peel skin.
4. Chop tomatoes.
5. Coat a large nonstick skillet with cooking spray.
6. Heat over medium high until hot.
7. Add the celery, bell pepper, onion and garlic.
8. Saute for about 5 minutes until vegetables are tender.
9. Add the chopped tomatoes, vinegar and black pepper.
10. Bring to a boil.
11. Cover, reduce heat and simmer for about 15 minutes, stirring occasionally.
