Ingredients:
4 slices bacon
2 scallions, shredded
1 teaspoon fresh ginger, shredded
1 tablespoon soy sauce
1 cup water
3/4 lb string bean, cut in 1-inch lengths
salt
Directions:
1. In a wok, cook bacon until crisp and set aside. Stir scallion and ginger in the bacon fat. Add soy sauce and water and bring to a boil. Add beans and mix well. Cover and simmer over low heat until liquid is reduced and beans are tender, about 30 minutes. Serve hot, garnished with crumbled bacon.
