Stephen's Mashed Potatoes With Chive Cream Cheese

This is a friend's recipe. We had it served with flavorful pork tenderloin and it was great! Stephen is from England and so I say cheers for this nice side dish!
Ingredients:
1 1/4 lbs potatoes, washed, peeled, quartered
2 1/2 cups water
3 chicken bouillon cubes
1/4 cup cream cheese with chives
5 garlic cloves, peeled
butter, as needed to taste
half-and-half, as needed to taste
salt, to taste
Directions:
1. Place potatoes in a large saucepan and add the water, bouillon cubes and garlic.
2. Bring pot to a boil; reduce heat and cover.
3. Cook for 20-25 minutes or until potatoes are tender.
4. Drain; reserving the cooking liquid.
5. Mash potatoes and add the cream cheese.
6. Blend well.
7. Gradually beat in enough reserved cooking liquid to make potatoes light and fluffy.
8. If you like, you can add butter and/or half and half.
9. Serve immediately.
