Another Realtor in my office gave me this wonderful recipe. It's absolutely delicious with coffee or tea in the morning or as an afternoon snack with lemonade!
Ingredients:
1 cup pecans, toasted and chopped
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 1/2 cups sugar
3/4 cup applesauce
3 large eggs
2 teaspoons vanilla
1 cup chopped pineapple
1 cup carrot, finely grated
1 cup raisins
Directions:
1. Preheat oven to 350 degrees.
2. Combine flour, salt, baking soda, cinnamon, and nutmeg.
3. In another bowl, mix together sugar, applesauce, eggs, and vanilla.
4. Fold the carrots and pineapple into the applesauce mixture.
5. Toss the pecans and raisins in the dry ingredients and then combine both mixtures and stir just until all ingredients are moistened.
6. Pour batter into 2-8x4 loaf pans and bake 55-60 minutes.
