Stella's Favorite Blackened Chicken With Pasta

A yummy Cajun-Creole pasta tossed with tomatoes, onions, bell peppers and garlic in a spicy creamy sauce. Topped with spicy blackened chicken breast. Served over your favorite pasta.
Ingredients:
4 tablespoons cajun seasoning
1 -3 garlic clove (minced)
1/2 onion (minced)
1 (28 ounce) can diced tomatoes
10 medium white mushrooms, sliced
1 (8 ounce) jar roasted red peppers
salt (to taste)
1 pint heavy cream
8 ounces pasta
6 skinless chicken breast halves (boneless)
1/4 cup cajun seasoning
1/2 teaspoon salt
2 -3 garlic cloves, minced
1 1/2 cups chicken broth (defatted)
1/4 cup olive oil
Directions:
1. Saute garlic and onion in a frying pan that has been sprayed with vegetable spray, until onion is soft.
2. Add roasted peppers, sliced mushrooms, til the mushrooms cook down, add tomatoes (do not drain), Cajun Spice, heavy cream. Simmer til sauce thickens. Season with salt to taste. Add more cajun spice if desired.
3. Place the chicken in a ziploc bag and marinate with Cajun Spice, salt, garlic and chicken broth, refrigerated, for 2 or 3 hours. Remove chicken and discard the marinade. Grill chicken on very hot, buttered grill for 12 to 14 minutes or until done.
4. Cook pasta, drain, and place on a platter.
5. Lay cooked chicken on pasta and then drizzle with sauce.
