This was my gramma's recipe and it's the best!!! I think the secret to its moist texture and marvelous taste is the sour cream or sour milk and making sure the bananas go to wine . Freeze 3 bananas to a bag, and then let them come to room temperature in a bowl when it’s time to make bread. Read more . Be sure to include all the wine (i.e., liquid) from the bananas. Doubling the recipe is recommended!
Ingredients:
1 cup sugar
1/2 cup butter
2 eggs
3 ripe mashed bananas
1/2 cup sour cream
1/2 tsp vanilla extract
1/2 tsp baking soda
1/2 tsp baking powder
2 cups flour
1/2 cup nuts (optional)
Directions:
1. Preheat oven to 350 degrees F.
2. Combine sugar with butter and eggs.
3. Add bananas, sour cream, and vanilla. You may use sour milk in place of the sour cream by adding 1 tablespoon of vinegar or lemon juice to 1 cup milk and let it sit for at least 10 minutes to sour.
4. Sift dry ingredients and add to mixture.
5. Pour into greased and floured 9-inch loaf pan.
6. Bake for about 1 hour, or until a knife inserted into the center of the loaf comes out clean.
7. Cool for a few minutes before removing from pan, then cool on rack.
8. Once the bread is cooled, wrap in foil and freeze for a couple weeks. Remove from freezer and bring to room temperature to serve. Hmmmm, good! Of course, that's hard to do if only one loaf is made, as it will be eaten quickly.
