Steamed Vegetable Medley

Steamed carrots, greens, onion, and zucchini. Top with sliced chicken breast or fish to make main dish.
Ingredients:
1 cup thinly sliced carrot
2 cups chopped collard greens, stems removed
1 onion, medium, sliced thick
1 cup zucchini, cubed
1 extra virgin olive oil to taste
1 clove garlic, pressed
1 tablespoon lemon juice, fresh
Directions:
1. Press garlic and let sit for 5-10 minutes to bring out their health-promoting benefits. Add salt and pepper and optional 1 teaspoon soy sauce.
2. Bring lightly salted water to a boil in a steamer with a tight fitting lid. (Chinese-style bamboo steamer works well.) Add carrots and onions; cover and steam for 3 minutes.
3. Add collard greens and steam for another 3 minutes.
4. Then add zucchini and steam for another 3 minutes.
5. Remove from steamer and place in bowl. Toss with dressing ingredients.
