Steamed Stir Fry Cabbage

Lightly hot veggie side dish, first steamed and then quickly sauté with paprika and garlic. Terrific with poultry and veal dishes.
Ingredients:
1 small cabbage, finely shredded
4 tbsp extra virgin olive oil
2 garlic cloves, finely chopped
1/2 onion, peeled and chopped
1 tsp sweet paprika
1 tsp hot paprika
2 tbsp red wine vinegar
salt to taste
Directions:
1. Steam cabbage until tender, but firm, about 20 minutes since steam starts to flow (if you do not want steamed cabbage, just boil it in salty water)
2. Heat oil in large shallow pan. Add garlic and onion. Let it cook on medium heat till onion is transparent, stirring constantly, about 4 minutes. Be careful not to burn garlic.
3. Add cabbage to pan (well drained if boiled in water), mix well and let it cook on medium heat for 5-6 minutes.
4. Spoon paprikas over cabbage and quickly mix it until vegetable is well coated and no lumps of paprika remains. Pour the 2 Tbsp of vinegar, let alcohol evaporate on high flame, about 1 minute, and add salt to taste.
5. Serve this as a side dish or as first vegetable course.
