Steamed Squash Tossed In Fresh Herbs And Olive Oil

Zucchini or yellow squash steamed in a vegetable steamer, then tossed with olive oil and fresh basil, thyme, marjoram oregano, or tarragon. Great with grilled meats and chicken.
Ingredients:
4-6 yellow squash or zucchini (can use all yellow crookneck squash or all zucchini, or mixed)
1/2 cup loosely packed mixed fresh herb leaves, such as basil, marjoram, thyme, oregano, and tarragon
6 tablespoons olive oil
Directions:
1. Wash squash, cut into 1 inch rounds
2. Place water in the bottom of a vegetable steamer, bring to a boil
3. Add squash to the steamer basket, cover
4. Cook to soften, about 8 minutes
5. While squash is steaming, coarsely chop herbs
6. In large bowl, whisk them with olive oil
7. Transfer the steamed squash to bowl
8. Toss gently and serve immediately
9. May add a little garlic, pepper, cayenne, etc.
