Steamed Mussels With Garlic (Liv Rockefeller)

I cut the out of a magazine and had it saved where no one could see it.
Ingredients:
4 tablespoons unsalted butter
1 medium onion, minced
4 garlic cloves, minced
1/4 teaspoon crushed red pepper flakes
1 1/2 cups dry white wine
6 lbs mussels, scrubbed, debearded
1 cup water
Directions:
1. Melt the butter in a large, heavy saucepan.
2. Add the onion and cook over moderate heat, stirring, until just softened, about 2 minutes.
3. Add the garlic and crushed red pepper flakes and cook until fragrant, about 1 minute.
4. Add wine and bring to a boil.
5. Add the mussels and about a cup of water.
6. Cover and cook over high heat, stirring occasionally, until the mussels open, 8-10 minutes.
7. Discard any mussels that don't open.
8. Spoon the mussels and broth into bowls and serve.
