Steamed Blackberry Pudding With A Blackberry Sauce

Ingredients:

  1. Cream butter and sugar till light. Add eggs and vanilla and mix well. Sift together flour, baking powder, cinnamon and 1/2 tsp salt.Add alternately with milk to the creamed mixture, beating smooth after each addition. Stir in lemon juice. Drain berries, reserving the syrup. Carefully fold in berries.
  2. Pour batter into a well greased and floured 5 1/2 cup mold; I used a bundt pan. Cover with foil and tie with a string. Place on a rack in a deep saucepan. Add boiling water, 1 deep. Cover and steam for 2 1/2 hours on low heat, adding water if needed. Cool 20 minutes then unmold. Slice and serve with Blackberry Sauce.
  3. Makes: 8 servings
  4. Blackberry Sauce: In a saucepan add water to reserved syrup to make 1 1/2 cups. Mix 1/4 cup sugar and 2 Tbsp cornstarch together. Gradually stir this into the syrup mixture. Cook and stir over medium heat until bubbly. Cook and stir 1 more minute. Stir in 1 Tbsp lemon juice.
  5. Makes: 1 2/3 cup
