Steak Sandwich & Worcestershire Mayo/Sweet Potato Fries |

Mayonnaise, Worcestershire and whole-grain mustard combine for a tangy, slightly smoky sandwich spread. Arugula is a peppery salad green, if you like, substitute your favorite salad green. Oven fries of sweet potatoes. Found this recipe in Cooking Light Magazine, December 2007 edition. Ingredients:

2 (8 ounce) boneless rib eye steaks, trimmed |
1/2 teaspoon kosher salt |
1/2 teaspoon fresh ground black pepper |
2 tablespoons fat-free mayonnaise |
1 teaspoon whole grain mustard |
2 teaspoons worcestershire sauce |
1 garlic clove, minced |
crusty whole grain bread, toasted |
1 cup arugula leaf |
2 medium sweet potatoes, peeled and sliced length-wise into wedges |
1 1/2 tablespoons olive oil |
1 teaspoon salt |
1/2 teaspoon fresh ground black pepper |
Directions:
1. MAKE SWEET POTATO OVEN FRIES FIRST:. 2. Preheat oven to 425ºF. 3. Place wedges on baking sheet. 4. Drizzle potatoes with oil; sprinkle with salt & pepper, toss to coat. 5. Bake at 425ºF for 20 minutes until golden, turning after 10 minutes. 6. MEANWHILE, PREPARE STEAK SANDWICH:. 7. Heat a grill pan over medium-high heat. 8. Coat pan with cooking spray. 9. Sprinkle both sides of steaks evenly with salt and pepper. 10. Add steaks to pan; cook 4 minutes on each side or until desired degree of doneness. 11. Let steaks stand 5 minutes. 12. Cut steaks diagonally across grain into thin slices. 13. Combine mayonnaise, mustard, Worcestershire, and garlic in a small bowl, stirring well with a whisk. 14. Spread about 1 tablespoon mayonnaise mixture on each of 4 slices of bread; divide steak evenly among bread slices. 15. Top each serving with 1/4 cup arugula and 1 bread slice. |
