Ingredients:
3 lbs top round steaks, 1/2 inch thick, trimmed of excess fat, cut into 6 ounce pieces
1 tablespoon flour
2 tablespoons olive oil
1 large onion, chopped
3 garlic cloves, chopped
1/2 tablespoon tomato paste
1 1/2 cups beef broth
1 tablespoon parsley, chopped
salt
pepper
Directions:
1. Heat olive oil in a large, heavy skillet on medium-high.
2. Sprinkle flour, pepper, and salt on both sides of steak pieces.
3. Carefully add the steak to the skillet and cook until browned.
4. Flip each steak over and cook on the other side.
5. A dark-brown (not burned) crust should have formed on the bottom of the skillet.
6. Push meat to one side of the skillet.
7. Add chopped onions and garlic with a sprinkling of water to dissolve the crust.
8. Reduce heat to medium and continue cooking onions until soft.
9. Add tomato paste, beef broth, and parsley; simmer.
10. Reduce heat to low, cover, and simmer for 50 minutes, or until fork-tender.
11. Serve over hot cooked rice.
