St. Patrick's Day Soda Bread

Irish Soda Bread
Ingredients:
2 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon sugar
6 tablespoons vegetable shortening
1 cup raisins
1 tablespoon caraway seed
3/4 cup reduced fat buttermilk
Directions:
1. Preheat oven to 375F.
2. Mix together first 4 ingredients in a large bowl.
3. Cut in shortening until consistency of small peas.
4. Lightly stir in raisins and caraway seed.
5. Add buttermilk and toss with fork until dry ingredients are moist.
6. Knead 3 to 4 times.
7. Form into a round, flat loaf.
8. Brush with additional buttermilk and sprinkle with a little sugar.
9. Cut a cross into the top, about 1/2 inch deep.
10. Back for 45 to 50 mins in 375F oven.
11. Cool on wire rack.
12. Wrapped tightly, will keep at room temperature for 3 to 4 days.
