I had some left over squash from dinner last night but didn't want to throw it out. I found this recipe on line and am going to try it out tomorrow. Good way to hide veggies from the kiddies too...LOL. I'll tell them AFTER they eat them
Ingredients:
2 cups all-purpose flour
1/4 cup sugar
1 teaspoon salt
1/4 teaspoon cinnamon
3 eggs
1 1/2 cups milk
1/2 cup mashed cooked acorn squash
2 tablespoons melted butter
Directions:
1. In a bowl, combine the flour, sugar, baking powder, salt and cinnamon.
2. In another bowl, combine the eggs, milk, squash and butter.
3. Stir into the dry ingredients just until combined.
4. Bake in a preheated waffle iron until golden brown.
5. Serve with maple syrup over top.
