Ingredients:
4 cups cubed, pared butternut or hubbard squash
1 medium onion, sliced
2 tablespoons butter
1 cup dairy sour cream
1/2 teaspoon salt
pepper
1/2 teaspoon dillweed
Directions:
1. Cook and drain 4 cups cubed, pared butternut or Hubbard squash.
2. Meanwhile, cook 1 medium onion, sliced, in 2 tablespoons butter till tender but not brown.
3. Remove from heat; add 1 cup dairy sour cream and 1/2 teaspoon salt; stir well.
4. Place hot cooked squash on platter; sprinkle with pepper; pour sauce over.
5. Sprinkle with 1/2 teaspoon dillweed.
6. Serves 4 to 6.
