This is a great side dish with anything from burgers to steak. Cooking time is really refrigeration time.
Ingredients:
2 large yellow squash, grated and squeezed dry
2 large zucchini, grated and squeezed dry
2 carrots, grated
1/4 cup red pepper, finely chopped
2 green onions, finely chopped
1/2 cup distilled white vinegar
1/4 cup sugar
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup vegetable oil
Directions:
1. In a medium bowl, combine squashes, carrots, bell pepper and green onions.
2. In a small bowl, combine vinegar, sugar, salt and pepper. Whisk until sugar is dissolved. Gradually add oil, whisking until well blended.
3. Add vinegar mixture to squash mixture, stirring to combine well.
4. Cover and refrigerate for 1 hour.
