An excellent way to use all the summer squash my garden produces. Super easy to make!
Ingredients:
2-3 summer squash (yellow or green) 1 inch dice
2-3 red or orange peppers, sliced lengthways
1/2 onion, sliced thin
2 cloves garlic, minced fine
evoo - extra virgin olive oil
salt & pepper to taste
Directions:
1. Cut squash, peppers and onion
2. Heat EVOO add garlic
3. Saute onion, peppers and squash - about 5 minutes total - keep them crunchy
4. season to taste
5. Enjoy!
