Ingredients:
1/2 cup butter or margarine, softened
3/4 cup firmly packed brown sugar
1/4 cup molasses
1 egg, beaten
1 cup cooked, mashed squash
1 3/4 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/4 cup chopped pecans
Directions:
1. Combine butter, sugar, and molasses, beating well. Add egg; beat well. Stir in squash. Combine flour, soda, and salt; add to squash mixture, mixing well. Stir in pecans.
2. Spoon batter into greased muffin pans, filling two-thirds full. Bake at 375° for 20 minutes.
