Squash Hotdish

Fairly common, fairly classic squash & cheese hotdish. Yum! (Use your favorite variety!) Think about adding mushrooms, as well.
Ingredients:
1 1/2 lbs squash
1 small onion, chopped
15 ritz crackers (more or less to taste)
1/3 cup extra virgin olive oil
2 large egg whites
3/4 cup cheese, shredded, low fat colby jack
salt & pepper
Directions:
1. Peel squash, remove seeds, cut into large chunks.
2. Boil squash until tender (5-7 mins).
3. Drain; mash squash chunks thoroughly; add oil, egg, onion, crumbled crackers, salt & pepper.
4. Put mix in greased casserole dish.
5. Top with cheese.
6. Bake at 350 for about 25 minutes (until the edges start to bubble).
