These are delicious with a buttercream icing.
Ingredients:
1 cup sugar
2eggs
1/2 cup shortning
2 cups flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 tsp. ginger
1 tsp. nutmeg
1 tsp. cinnamon
1/4 -1/2 cup buttermilk
1 tsp. vanilla
1-1/2 cups squash
Directions:
1. Preheat oven to 350 degrees.
2. Cream together sugar, eggs and shortning.
3. Sift dry ingredients and add to the creamed mixture.
4. Add buttermilk, vanilla and squash, and stir well.( the amount of buttermilk used depends on the moisture in the squash., better too much than too little)
5. Pour batter into lined tins and bake 15-20 minutes.Frost with your favorite...or not. : )
