I found several Squash Casserole Dishes and then simplified and made this. The family loves it! Hope you enjoy!
Ingredients:
7 or 8 small yellow squash
2 eggs
1 1/2 cups grated chedder cheese, i use sharp
1/4 c. milk
1 small onion, chopped, i use vidalia or sweet onion
3 tbs splenda or sugar if you prefer
1/2 stick of butter, cut into slices
1 sleeve of wheat ritz crackers or some other buttery type of cracker, crushed
Directions:
1. Slice the squash and parboil about 10-15 minutes, drain
2. Add 2 beaten eggs
3. milk, onion, splenda and butter
4. Pour into a casserole dish, top with cheese and then add the crushed crackers.
5. Oven at 350 for about 25 minutes
