Springtime Vegetable Coleslaw

This is a nice healthy salad for those hot summer days.
Ingredients:
1 lb shredded cabbage
1 cup grated carrot
1/2 cup broccoli floret, chopped
1/2 cup halved cherry tomatoes
1/2 cup sliced celery
1/2 cup peeled seeded diced cucumber
1 cup chopped fresh parsley
1/3 cup olive oil
2 tablespoons vinegar
1 tablespoon dijon mustard
1 teaspoon garlic salt
Directions:
1. Combine cabbage, carrots, broccoli, tomatoes, celery and cucumber in large salad bowl.
2. Whisk together remaining ingredients for dressing.
3. Pour over vegs; toss to coat well.
