Spring Vegetable Rice Salad

Ingredients:
4 c. cooked minute rice
1 c. chopped tomatoes
1 c. asparagus spears cut in 1 in. pieces, cooked and cooled.
3/4 c. miracle whip light dressing
1 t. dijon mustard
1 t. parsley, chopped
grated peel & juice from 1 lemon
Directions:
1. Toss rice with tomatoes and asparagus in large bowl. Mix Miracle Whip dressing, mustard, parsley, peel and juice from lemon together until well blended. Pour over rice mixture, toss to coat. Cover and refrigerate until ready to serve.
