Ingredients:

  • 2 lbs. ground pork
  • 1/2 cup. chopped onion
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 1/2 cup. grated carrots
  • 3 cup. bean sprouts (must be kept dry)
  • 2 1/2 oz. bean threads (or you can use rice noodles in asian food section)
  • 1 package. filipino lumpia wrappers

Directions:

  1. Soak the bean threads in water for 1 hour.
  2. Drain well.
  3. Cut threads into 4 inch pieces.
  4. Set aside.
  5. Mix the pork, onion, salt, pepper, garlic powder and the egg yolks together well.
  6. Add the grated carrots, bean sprouts and the bean threads and mix using a fork and spoon.
  7. Place a couple of teaspoons of mixture on a wrap.
  8. Wet the edges of wraps with water, roll them up and seal.
  9. Using the water or egg wash on the edges helps to create a seal.
  10. Deep fry in hot oil until golden brown, drain on paper towels.
