Spring Greens With Beets And Goat Cheese

This is a wonderful salad . I don't care for goat cheese so have used feta and also blue cheese.
Ingredients:
2/3c pecan halves
3 tbs balsamic vinegar
1 tbs water
1 tbs sugar
1/4c olive oil
2 tbs maple syrup
1 tsp. whole grain mustard
1/8 tsp salt 1 pkg. (5oz) spring mix salad greens
1 can (141/2oz) sliced beets
1c crumbled goat cheese(or feta ,or blue)
Directions:
1. In large, heavy skillet.cook the pecans,1 Tbs vinegar and water over med. heat until nuts are toasted,about 4 mins. Sprinkle with sugar. Cook and stir for 2-4 mins pr until sugar is melted. Spread on foil to cool.
2. In small bowl,combine the oil,syrup,mustard,salt and remaining vinegar. Refrigerate till serving
3. In a large bowl,combine salad greens and dressing;toss to coat. Divide among eight salad plates. Top with beets,goat cheese and glazed pecans.
